1. Mix: In a bowl, combine 30g dosa premix, 15g curd, and 35g water. Stir well to form a smooth, lump-free batter. Rest: Let the batter sit for 5-10 minutes for best results.

2. Heat Pan: Heat a non-stick or cast-iron pan on medium-high heat until hot. (The pan is ready when water droplets sizzle and evaporate instantly upon sprinkling.)

3. Pour & Spread: Pour a ladleful of batter in the center of the pan. Spread it evenly in a circular motion to make a thin dosa.

4. Cook: Drizzle a few drops of oil around the edges (optional) and cook until the dosa turns golden brown and crisp.
